This is our favourite Christmas pudding and as it’s the third year we make it in occasion of the festivities I’d go as far as to state that it’s becoming a bit of a tradition.

From the pics below you can see it through the various stages of preparation.

First, once it comes out of the freezer after 12 hours of solidifying, then when it is ready to be served and finally, my personal favourite, when all the ice-cream and delicious ingredients ar revealed as you serve!

We vary the original recipe by using Italian Mostarda instead of glacé fruit and this time we used amarena (sour cherry) ice cream and cherry jam to spread across the inner side of the panettone.

Just to revel in the sheer indulgence of the season before we knuckle down to green tea and salad, a quick snapshot of the iced jam sponge (blackberry with a sprinkling of coconut flakes), pasticcini (pastries) and choccolate and ricotta cakes from a do with the Tang family….
